Simple and Sweet Gluten-Free Summertime Treat

As a person with multiple food allergies, I sometimes will find myself digging for recipes that are easy to make, taste terrific, and nobody realizes are gluten-free.This simple pie hits the mark. Topped with ice cream, whipped cream, or coconut whip my family wolfed it down, no questions asked. The crust is baked, the filling cooked on the stovetop, you can serve it warm and slightly runny or cool it down

Strawberry-Blueberry GF Pie

GF Oatmeal Crust

Prep 10m, Cook 20-25 m

(if you want a crumble top on the pie, double the recipe – and cook half on a cookie sheet.Crumble when cool and use to top the pie)

  • cooking spray
  • 2 cups gluten-free rolled oats
  • 1/2 cup confectioners’ sugar
  • 1/2 cup butter, melted
  • ½ tsp 5 spice powder, or pumpkin pie seasoning
  • 1/8 teaspoon salt
  1. Preheat oven to 350 degrees F.
  2. Lightly spray a 9-inch pie dish with cooking spray.
  3. Melt butter
  4. Combine oats, confectioners’ sugar, butter, cinnamon, nutmeg, and salt together in a bowl; press into the prepared pie dish.
  5. Bake in the preheated oven until lightly browned, 20 to 25 minutes. Cool completely.

Strawberry-Blueberry Filling

  • 3 ½ cups of fresh strawberries cut into bite size chunks
  • 3 ½ cups of fresh blueberries
  • 1 cup of demerara sugar (white works too)
  • 1 tbs lemon juice
  • 5 tbs tapioca starch
  • 2 tbs butter
  1. Simmer berries, sugar and lemon juice in a large saucepan over medium heat until warm and juicy, about 5-10 minutes, gently stirring occasionally.
  2. Spoon out about 1/2 cup of the juice from the pan into a bowl. Stir tapioca starch into the juice until smooth. Bring pot of berries back to a simmer and slowly pour in the starch mixture. Gently stir mixture (being careful not to mash the berries), until thickened, about 2-5 minutes.
  3. Remove from heat and stir in the butter. Allow to cool for 15 minutes.
  4. Pour into pie crust – top with crust crumble if you like.
  5. Serve warm with ice cream, or cool in the refrigerator first.
